I'm gonna smoke a couple turkey legs.  Brine them in the morning for a few hours before smoking for 2.5-3h @ 325 deg. Season with some homemade Cajun dry rub and smoke with a mix of pecan and hickory wood.  Serve with some BBQ asparagus and corn on the cob with some steamed rice. I usually like my turkey with gravy but with the brine before smoking the meat comes out so so juicy. Not super fancy, but Ramsey's attitude towards professional chefs vs home cooks is night and day. I think he would both love my meal and also be able to give me tips on how to take it to the next level.
